Ramen’s getting to be a thing in Portland, and it’s still presented in buzzier places or self-conscious izakayas but the gospel of “you can serve a lot of hot cheap tasty protein-over-carbs meals with even less space or skilled labor than a grill by keeping broth going and ladling it over fresh ingredients” seems to be getting out
